
Very quick spread that tastes great on a slice of fresh/toasted bread.
No, it’s not a tuna salad, yes, its better.
[Total time: 10 minutes]
Ingredients:
2 cans of tuna in water (5 oz, 140gr a can)
2 tbsp. of lite sour cream
1 tbsp. of lite mayo
1 small onion
3 scallions
1/2 cup of chopped celery
Zest from one lemon
1 tbsp. of lemon juice
1 tbsp. of salt
1 tbsp. of black pepper
1 Cup of roasted walnuts
Fresh basil (for the toast)
[Improvising options: Tuna --> Salmon | scallions --> arugula, spinach | mayo --> sour cream | walnut --> macadamia, Brazil nuts]
Preparation:
Chop the onions and scallion to 1-inch pieces and puree together in a food processor, together with all other ingredients except for the walnuts. I like to leave small chunks of walnuts so once the texture becomes a paste, I add the walnuts and pulse the food processor for 3-4 times.

I toast a slice of bread, scope some of the tuna walnut spread on it and finish with a leaf of fresh basil on top. Chilled glass of white wine and…. its perfect. Enjoy.
