Even if you are an excellent cook, you cannot stay indifferent to this gorgeous dish. This recipe might fool you to think it’s very time consuming, but it really isn’t. These beautiful rolls are a Vietnamese dish, which together with a vermicelli sauce make a perfect low calories lunch or dinner.
Preparation: 25 minutes, Cooking time: 15 minutes, Total: 40 minutes. 4 servings (2 per person)
Ingredients of Grilled Chicken Rolls:
For the chicken rolls:
2-3 Chicken breasts
½ lb of sprouts
3 Celery stalks cut 3 inch long, thinly sliced
4 Scallions cut 3 inch long, slice along the white part
Salt and pepper
Bunch of Chive
2 Tbsp. of olive oil
For the Vermicelli sauce:
3 Tbsp. of fish sauce
2 Tbsp. of Mirin sauce
2 Tbsp. of brown sugar
½ carrot, finely chopped
2 cloves of garlic, finely chopped
1 Thai hop pepper, finely chopped
¼ Cup of water
Juice from one lime
Start by slicing the chicken breasts lengthwise to very thin slices. If you buy them fresh, make sure you ask the butcher to do that for you.
Lay one sliced chicken breast, salt and pepper it. On the part that is close to you, arrange 2-3 pieces of celery and scallion and a bunch of sprouts.
Roll the chicken while you make sure the filling is tight, and use the chive to gently tie the roll.
Warm a non-stick pan for a couple of minutes until it is very hot, grilling pan would work best here. Put the rolls in the pan, with the chive tie facing down. Grill for 4-5 minutes and then turn to the other side for the and grill for additional 4-5 minutes.
For beautiful rolls, grill the other two sides as well until you see grilling marks. That’s it for the grilled chicken rolls.
For the sauce: add all the ingredients to a small bowl and combine together by whisking well.
